[bug] Pinch zoom on iPad is too erratic

Steps to reproduce

• Load up app.tldraw.dev on iPad (15.3.1)
• Create some marks on the canvas (in order to guage the zoom level)
• Activate the select tool (draw / pencil tools cause [bug] Multi-touch input on iPad when draw & pencil selected makes line between all fingers #205 )
• Use two finger pinch to zoom in and out of the canvas

Expected result

• The pinch zoom is dampened enough that the user is able to accurately control the zoom level in order to get the position they want

Actual result

• The pinch zoom is too rapid and the user is stuck between too zoomed in and too zoomed out

I've used accessibiliytouch in order to record the pinch gesture
