Pin specific container image versions in the helm chart values

Right now, we are using the rolling tag as default, which for development is good, but for any other use case is pretty dangerous.
We need to improve the release process, so we update the container versions in the helm chart, before we publish the release. We could still use the rolling tag in the development helm chart.

If this could be automatized it would be great.
