The default test data here is currently VC 1.1: https://github.com/w3c/vc-di-ecdsa-test-suite/blob/main/tests/mocks/achievement/document.json

This should be switched to VC 2.0 test vectors such as:

https://github.com/w3c/vc-di-ecdsa/blob/main/TestVectors/ecdsa-sd-2023/windDoc.json
https://github.com/w3c/vc-di-ecdsa/blob/main/TestVectors/ecdsa-sd-2023/windMandatory.json
https://github.com/w3c/vc-di-ecdsa/blob/main/TestVectors/ecdsa-sd-2023/windSelective.json
