OpenSSH has been removed from the container. Proxmox has OpenSSH configured and enabled by default. I do not set the password for the root user in the container. If you'd like to remote into the container, you can connect to Proxmox via SSH, then run pct enter 100 assuming the container you want to connect to has an ID of 100. You also have the option of installing the SSH addon in Home Assistant. If you'd like to install OpenSSH and configure it inside the container, you can follow any Debian based guide to do so.

I presume OpenSSH has been removed to comply with the Architecture notices for HA.

First, could the answer be added to the Readme?

Could the purging of SSH be optional i.e. ask the user at install? Obviously with a warning that the final setup will show as "Unsupported".

A lot of people want this access; part of the reason for going with a Debian based install.
