A interpolation and mapping function for pH values. This implementation uses a custom colour model for the Universal Indicator colours.
To implement this function, use the code FieldMap(Sample Data, Scalling size, De-limiter*)
This functions uses the 'interp2' matlab function which is a 2D interpolation function, to read more about this function, visit the MathWorks Documentation
*De-limiter is the symbol that is used in the sample data file to seperate the individual items of data
