WireMock 3 extension compatibility

Proposal

We need to ensure that all key WireMock extensions are compatible with WireMock 3. This ticket is used to track compatibility of the extensions and the progress on them

Compatibility Status

• Webhooks Extension - from the 3.0.0 release
  • WireMock Webhook Extension 3.0.0 JAR is broken #2342
  • wiremock 3.x and webhook error #2341
• Response Template Transformer - from the 3.0.0 release
• State Extension - from version 0.0.7
• JSON Body Transformer, Callback Simulator, Request time matcher from 9cookies/wiremock-extensions - untested
• CORS Protection Extension - untested
• WireMock telemetry extension - untested
• JWT Extension
