Hi there,
Would it be possible and not too difficult to also include theme files and may be even the plugin folder for syncing?

no - this isn't a tool for deploying code. try using something like this: https://www.digitalocean.com/community/tutorials/how-to-set-up-automatic-deployment-with-git-with-a-vps
