Ionization equilbirium and nonequilibrium example gallery entries should use Fe

Currently the example gallery uses C as the example element for both the IEQ and NEI examples. I did this originally because that was the test data I had, but now the test database includes all files needed to compute all of the rates. Fe is a more interesting example and one that people care about more often.
