I used my iphone to browse clipboardjs.com and played with the demos, unfortunately it doesn't work. Nothing is copied / cut.

Experiencing the same thing with iOS 10.3.3 on iPad with Chrome and Safari. Any plans, that this will be fixed? I´m not even sure if this has ever been included in this library. Otherwise do you know a nice work-around?

Personally I have no issues with this in iOS 10.3.3 Safari browser. Could it be your implementation?
