This does not work for me. Composer will always install v6.4. I assume it's due to "typo3/coding-standards".

It looks like support for Symfony 7 has already been added to the TYPO3 coding standards package (on January 31st), but there has not been a release since. (The last release is from December 20th.)

@gilbertsoft Would you be willing to release a new version of TYPO3/coding-standards for this?

Getting Symfony 7 support across the TYPO3 ecosystem really is a can or worms … 😉
