Protein sourcing and use market research

Hello everyone!
Hope all is going well with the projects :) I’m Lauren, a 3rd year Natural Sciences undergrad currently working on my minor subject (Enterprise Technology at the JBS) project. Our aim is to determine the commercial feasibility of a local enterprise idea, by evaluating the technology, carrying out market research, forecasting etc - the usual business essentials.
More importantly, we’re interested in understanding the potential users and customers, to create value rather than just another product!
As a scientist and potential user of our enterprise's technology, my team and I would be very grateful if members of your team would answer a few questions - mainly about the sourcing and use of proteins in your projects and/or labs.
