I've just created a new Python kata and can't enable Python 3.x. I see the following issue again:

Default Version is not a supported version.

while Re-publishing the kata :(

I just ran into this same bug (or something very similar) on this kata:

The same error message was coming up when the katas author tried re-publishing after adding Python 2 compatibility. I went in to try the same thing and Validate Solution worked for Python 2 but Publish was getting that same error.

As a test, I ended up adding a comment sign, #, in the Complete Solution section and then re-publishing worked and Python 2 is now available as well. I'm not certain that is what fixed it but maybe you could try adding (or removing?) some characters in your katas solution to see if that helps?
