Edited README.md by formatting Hydration Kit For Windows Server 2019, SQL Server 2017 and ConfigMgr Current Branch with Markdown. I've included the screenshots in the docs/ directory so the entire Kit can be contained to this repo. With Markdown, creating and updating a TOC can be automated and gave some flexibility on navigating the document.

We have a lot of options for the README, so please let me know what you think of this format. :)
