Host injections, lmod hooks and moving gpu-related host-injection instructions #188

Currently, the host_injections directory was introduced as part of the Advanced Usage => Accelerator support => GPUs. I think we better introduce the concept of host_injections being a location that can be used for site-specific EESSI configuration first. Since this is about configuration, it makes sense to me to do this as part of the Installation instructions. I also imagine that the Installation chapter would be the only chapter that sysadmins read, so in my opinion it should contain everything needed to install and configure EESSI to it's full functionality (including GPU support, MPI tuning, etc).

I've also added new documentation on how to write Lmod hooks in host_injections. This basically provides the documentation for the functionality added in this PR.
