A 2 camera setup holds great promise, but I need to organize my thoughts:

Rebuild the 2 camera conveyor:
Make it so the gap about 8MM
Design and use new motor end plates. (rubbing issue)
Keep the same top plates for now?
Fix the 1mm low motor rail. Why is it low?

Why did coins on the 2 camera top plate buckle?
This is going to be a pain to debug in production.
I need to put a video camera on to find out why.
Maybe the belt join is causing the coin to jump.
It was being fed too fast
It had too wide of a window
The input conveyor was too short or
The input guide rails need to have a more gentle angle.
The top plate seat needs to be changed.

Get another 2 camera DataSet:
Hook up and program the Arduino again
Use the slow hopper function
Brighten the top camera lighting
Make a new top plate
Make a procedure on how to do this. Everything will have to be redone, including finding the linear regression for the center finding.

Two camera conveyor:
Make the top plate a little smaller
Maybe make tops guides so the coins can’t buckle.
