This is a collection of knowledge about running M1 on PHP7 that we gathered, and stuff you should look out for. Once again, Inchoo_PHP7 extension is provided as is. You are free to do with it whatever you want, but note that this is a "developer level" extension. You should know your way around Magento, PHP7 and the rest of the stack if you plan on using it.
