Refactored working with latest node

Updated mockbin repository, previous branch had a number of depreciated node packages, and did not correctly compile and run.

I have updated those packages essential to be able to successfully run, and added a working Dockerfile (using node:18-alpine) and docker-compose.yml

Update to the Redis connection which was previously not compatible with the current release of Redis.
