  1. No greg ores in space (yes, it's difficult - but even cr0ss-huesos could make it). No sense to greg-space at all.
  2. NPC ships explode. Not funny, really.

You can add any ores to space.
On 1.7.10, ores needs to be pure blocks, no NBT.
On 1.12.2, it can have custom NBT and Gregtech EU is supported.

"ships explode" doesn't make sense here, you'll have to be more specific.

Just create world with warp and greg and tp to space - most NPC ships will be expoded.
Something with voltage, maybe.

There's no reason for derelict ships to be pristine/intact in the middle of asteroid fields. They're damaged as part of the world generation.
On the other end, derelict ships inside moon are well protected and will mostly be intact.
