This updates minecraft and all co-dependencies to their 1.21 versions.
Additionally, a fork of the shadow plugin is now used like on LP main repo to ensure it works with more recent versions.

I have thrown it onto a test server together with something to consume the placeholders (styled-playerlist) and worked without an issue.
