[Docs] [UI] Improve the visibility of Logo in Docs dark theme

Current

• It is difficult to see the logo in dark mode configuration
  

Possible solution

• I couldn't find dark mode compatible logo in any repository of OSIPI. If there is any, we should use it.

or

Create a logo for dark mode screens. The text colour needs to be changed.

P.S. It is just a personal preference, so feel free to close the issue if it seems unnecessary to rebrand the logo.

Hi Ardash, I agree this isn't easy to see. The discussion about the logo will need to be osipi-wide so I will bring it up at the next management meeting. Changing the docs theme might be easier!
