I've created a fork of simple-peer which merged the ICE Restart functionality PR (which has issues running in node environment but works great in Electron). With This modification the WebRTC peer connection reconnects automatically when possible.
When the official simple-peer library merges the original PR, then the reference to my fork can be replaced with the official version.
We made some excessive testing on this modification and it worked great every time.
