Add support for Parsers and upgrade the way things work (#7)

This new version adds support for:

- Possibility to add different parser, while not implementing PageXML support #3 (ready for it though)
- Regular Expression in the "char" column
- Changed the way things are corrected, fixing previous bugs
- Github workflow, fixing #2 
- Tests, fixing #1 
- Better handling of Unicode Normalization, with a clear target on NFC.
- Adds name of MUFI characters when found.

It seems that issues remain regarding the update of the table, specifically with Y WITH DOT ABOVE in the CLI but not in the parser function...
