Description? Bump to 2.1.0 and remove deprecated payment.php to comply with PrestaShop/PrestaShop#34578

How to test? This PR only removes a deprecated file that should not be used anymore, behavior should remain identical

About version change

Theoretically removing this file is a BC break but we don't follow exactly SemVer on modules. As this file has been deprecated since PS 1.5.0 I think we can remove it in a major 2.1.0 version. I feel weird bumping the version number to 3.0.0 only to remove one file.

Hello @matks ,

Tested on 1.7.8.x, 8.0.x, 8.1.x and develop.

Upgrades went went + checked the expected behavior.

It is QA ✅
