Decided to use pkg/main to simplify conda install. The quantecon package gets included in the pkgs/main channel within ~7-10 days of updating through conda-forge.

I am going to close this PR and open this change as a manual-change in the new myst repository. That way this repository will always build compatible notebooks for the colab environment using pip instead of conda
