Updated highlight extension settings
and codeblocks throughout the docs to align with mkdocs-material recommendations. codehilite is deprecated in favor of the highlight extension: https://squidfunk.github.io/mkdocs-material/setup/extensions/python-markdown-extensions/#highlight
