As per the community feedback:

After enabling Approval on a list/library, views "Pending/Reject Items" and "my submissions" are added. How can I override the definitions of those views?
There is no BuiltInListDefinition for these as far as I can tell.

BuiltInListViewDefinitions.Libraries.ApproveRejectItems
BuiltInListViewDefinitions.Libraries.MySubmissions

+ added the following tests:
CanDeploy_ListView_As_OOTB_Library_MySubmissions
CanDeploy_ListView_As_OOTB_Library_ApproveRejectItems
