Open the user preferences file, which can be found using the menu item Sublime Text -> Preferences -> Settings - User or by pressing the super + , keys.

Apply a color scheme by adding "color_scheme": "GaR-COLOR_SCHEME_NAME.tmTheme" to the user preferences file.
Apply a UI theme by adding "theme": "GaR-UI_THEME_NAME.sublime-theme" to the user preferences file.
