Values can be found in this spec: https://docs.microsoft.com/en-us/openspecs/sql_server_protocols/ms-ssas-t/f85cd3b9-690c-4bc7-a1f0-a854d7daecd8

In the latest [MS-SSAS-T].pdf version, we have the documentation for:
Table.DataCategoy (page 29)
Column.DataCategory (pages 31-39)
Measure.DataCategory (pages 49)

Might as well show these as dropdown values in Tabular Editor.
