Use access functions instead of projections in UniMath/Bicategories/Limits/Examples/LimitsStructuredCategories #1709

          It seems to me that this file shows what happens when one does not use access functions. Could we add access functions instead of those projections?

This issue is also related to: https://github.com/UniMath/UniMath/blob/master/UniMath/Bicategories/DaggerCategories/BicatOfDaggerCats.v#L73.

I think this coercion should be removed, because when playing around with coercions on bicategories, I noticed they didn't behave well.
