Keep the wind speed and direction info when retrieving soundings. Addresses #298

We may want to change the short names from speed and direction, but they seemed the most obvious.

See what you can find in the CF Standard Name Table. At a minimum, the word "wind" should be a part of the names.

Yep, the "long names" are CF standard.
