Map: Generalise birds eye plot for more use-cases, including map viz

The birds eye plot currently has hardcoded labels for the "bracket" elements. The map (and maybe other viz's) needs to say "Data with geolocations" and "Data for main variable". So we need to make this specifiable by props.

Would be good to do alongside VEuPathDB/web-eda#994
