Enhancement Request: Grayscale as default filter

Overview:

We are currently developing a fax app using the React-Native-Document-Scanner-Plugin. During our development phase, we have identified a specific area in the plugin that could benefit from an enhancement that will significantly improve our app's efficiency and user experience.

Enhancement Details:

1. Default Grayscale Filter: We would like to propose a modification to make the grayscale filter the default option whenever a document is scanned. Our fax app primarily deals with black-and-white documents, and having this as a default option will make the scanning process faster and more efficient for our users. They will not need to switch manually to the grayscale filter each time they scan a document.
2. Optional Removal of Other Filters: Additionally, we would like the capability to optionally remove or hide other filters provided by the plugin. Our app focuses on simple document faxing, and many of the additional filters may not be necessary or could potentially confuse our users. By allowing the removal or hiding of these filters, we can simplify the user interface and streamline the document scanning process.

Use Case:

Our primary use case involves users scanning documents to be sent via fax. As such, we require a quick, efficient scanning process that produces clear, readable documents.

Here is a typical use case:

• User opens our app to send a fax.
• User scans the document using the React-Native-Document-Scanner-Plugin integrated within the app.
• The scanned document is automatically converted to grayscale (as this is now the default filter).
• User reviews the scanned document and is satisfied with the quality.
• User sends the document via fax through our app.

By implementing the requested enhancements, we believe we can significantly improve the user experience and efficiency of our app.
