that dotnet cdk hasn't been update in 3 years. might be worth deleting

What
This PR changes https://docs.airbyte.com/connector-development/ to link to the new Python CDK connector guide by @girarda from #36743.
It also doubles down on using Connector Builder for most things, and clarifies the guide.
And it applies formatting.
Merging
As long as Vercel builds, it should be safe. No code changes.
