Most Matrix channels are ansible.com and not .im #77352

##### SUMMARY I could not find any of the Ansible Matrix channels with ansible.im - they were all listed under ansible.com and the link to matrix.to shows them also as ansible.com e.g. #users:ansible.com so update the Matrix channel names. Did not touch #meeting:ansible.im #digitalocean:ansible.im and #molecule:ansible.im because clicking on the matrix.to link doesn't show them as ansible.com unlike the others.
