docs: 修改文档分类，简化文档结构

💡 Background and solution

之前文档有几个问题：

• 以太坊适配器文档内容太多
• 之前分类 “连接” 很容易误导开发者，相比适配器的文档更适合承担连接的说明

调整的点如下：

• 移除适配器文档中部分意义不大的 demo
• 移除适配器文档中非连接链的 demo
• 适配器分类改名为“连接链”
• “连接”分类和“展示”分类合并为“UI 组件”
