NIFI-12571 Upgrades Logback from 1.3.14 to 1.4.14.

Logback 1.3 and 1.4 have the same features, but Logback 1.4 is the current baseline version, requiring a minimum of Java 11. This pull request is limited to the main branch and cannot be backported.
