Do not use latest

Currently, the scheme package, e.g., hermesjs-mqtt is using latest on its version. This will fail because versions above 2 are only compatible with Hermes 2.

Here's the offending line: https://github.com/asyncapi/node-codegen/blob/develop/templates/package.json#L12.

It should probably use version 1.x.
