[UX] Use theme_label_machine_name() for the field labels and their machine names in the "Manage fields" tables

Not sure if this was left out intentionally or not, but I don't see why we shouldn't be consistent with the rest of the admin UI. I believe that it will also slightly reduce visual clutter on these tables, and make them more compact for use in narrower screens.
