I can't find any photos of UK train signs that show weather information, so. I'm gonna close this as it's outside the scope of the project. To anyone reading: by all means prove me wrong and reopen this :)

I came across this which reminded me that I'd seen this post; it shows the weather ability on the infotec CIS screens
