update country list to utf-8 friendly list + corrections

howdy. thought the country list needed some updating.

notes

i made a script to generate the output if you're interested. can easily add it as a bin to the repo. this fixes all the effed utf8 chars.

• the source database the script uses is https://raw.githubusercontent.com/datasets/country-codes/master/data/country-codes.csv
• also i intentionally spaced it out like that so it's commit friendly.
