Build more working OIDC examples

Any OIDC provider should work and probably does work, but it would be good to demonstrate it so we can certify a list of providers which we now to work.

Closed by #360. We have ORCID and Google now. Still haven't done Microsoft, but I think we can circle back to that if/when it comes up.
