Cookies and other site data - problems

Description

In the settings on the page "Cookies and other site data" I have some problems.
I was trying to enable cookie deletion on exit for youtube.

1. sites with texts "embedded on .." or "Including third-party cookies on this site" don't have three dots to move or edit them. I don't get why, this is quite inconvenient.
2. Youtube is already "under always allow cookies" (see screenshot, filtered for youtube), this doesn't get deleted when I click on the bin-icon, even after browser and windows restarts, as well as all other sites with bin-icon.
3. I copied the URL and added it into section "Always clear cookies when windows are closed", but cookies won't get deleted. Second, third and fourth screenshot show cookies after a fresh brave-start. Youtube still shows videos recommended for me. How can I achieve having a new youtube-session on every browser-start without having to accept cookies for every subpage-reload (because of all cookies blocked)?

Youtube won't recognize me if I clear all cookies on exit. But I also won't be logged into any other side.
It would be nice to not clear cookies of sites for which I deactivated shields
