Collect stack files in a folder. #30

Move versioned stack-*.yaml files to a folder for such stack files.

Went with only one version of stack in the end. This is a build tool and not a library. I don't need to support multiple GHC versions now that we have ghcup that enables quick switching of GHC versions.
