Update Elasticsearch to 7.16.1 for Zeebe 1.2 branch, related to https://www.elastic.co/guide/en/elasticsearch/reference/current/release-notes-7.16.1.html

@npepinpe can you check the failure in Jenkins, I don't really understand how this change can lead to revapi model API changes?

There's an issue on 1.1 where sometimes the check fails, but not always. It's weird, but I would ignore for now - 1.1 has an outdated and invalid revapi config, I'll backport the right one tomorrow, in the mean time just rerun your build, it's most likely not a blocker.

Note that 1.2 and develop aren't affected as they have the right config/version of revapi.
