open up classes for extension - remove final and package private #122

Some classes prevent extension by being final or package private, see discussion here: https://forum.camunda.org/t/mock-field-injection/4988/4

I see no harm in opening them up, so it's easier to locally extend their usage.

Unfortunatelly FluentJavaDelegateMock is final and FluentMock is package restricted.
