Enable a “Demo” mode/“Normal” mode option for Mint with additional options for:

  • Mint pay in cap
  • Pay out Invoice cap
  • Already have mint_peg_out_only option for sunsetting (See #151) Could also be used to sunset a demo mint.

Enables mint runners to get comfortable running a mint with a cap on amounts that can be deposited (and removed).
Cue to new Cashu users to only deposit small amounts while in demo mode.

It would be great to have peg-in/peg-out caps for non-demo mode too. Like small/medium/large "mints" :-)
