Question: is macbookpro11,1 ok to use with a Ivy Bridge cpu?
Yea because is set default 11.1 for macOS Big Sur; mandatory SMBIOS because 9.1 not working in BS, Apple drop support
You can use 9.1 for Catalina no problem

As of OpenCore 0.5.8, this driver is built in and configured via config.plist -> UEFI -> APFS
APFS: Settings related to the APFS driver
EnableJumpstart: YES
Allows us to load Apple's APFS driver
HideVerbose: YES
Hides APFS debugging info, generally not needed
JumpstartHotPlug: NO
Allows APFS hot-plug at the OpenCore boot menu, for us we'll ignore
MinDate: 0
Minimum date allowed for Apple's APFS to load, current default is set to 2020/01/01
Setting to -1 will allow any version of APFS to load, note this is highly discouraged for security reasons
MinVersion: 0
Minimum macOS version that OpenCore will load the APFS driver, current default is set to 10.13.6

Did you try in combination with MinDate set to -1 (or preferably a release date of the macOS that you would like to support? For example for Catalina: MinDate: 2019/10/07 ) or MinVersion?
