I swiped debian/circus.init to base my own init script off of. It uses the --daemon option, but seems not to do anything with the log output, which was unhelpful.

You can also set this in circusd.ini in the [circus] section:

logoutput = /var/log/circus/circusd.log

That's what my Puppet module for Circus currently does. Not sure if that misses some startup output before Python's logging is initialised.
