Fixes #4255

Proposed fixes:

For latest version we should use latest_release_tag while for the previous we should use
current_release substitution in the docs

Features:

  • includes tests covering changes
  • includes updated documentation
  • includes user-visible changes
  • includes API changes
  • includes bugfix for possible backport

@tino097 can you cherry-pick this to the doc branches to update the current docs (keep the backport labels as well)
