Awesome work here Helen - I just moved one course helper function and updated the helper functions a bit.
The branch has been working well for me - so approving so far. This PR will help us upgrade some other things and makes our project compatible with OpenAI!

Summary
This PR works on the Cornellians Say feature. OpenAI needs newer node versions and typescripts so this upgrades to node 18 as well as integrates OpenAI and endpoints for the summarizing feature.
